Recipe 🍳

  1. Marinate 2kg of pork ribs, after draining their blood, in the sauce. While it's delicious to cook and eat immediately after marinating, refrigerating and aging for about a day before cooking makes the meat even more tender and flavorful as it absorbs the sauce.
  2. Once the sauce begins to boil, add 1 carrot and 2 potatoes, which have been cut and prepared in advance. Cook the potatoes and carrots for a long time until they are soft and mushy, so they can be mashed and mixed with rice.
  3. Add 1 green onion, cut lengthwise, and 2 Cheongyang peppers, sliced diagonally. (Adjustable to your preference) Adding Cheongyang peppers makes the dish more flavorful and spicy, but you can reduce the amount if you don't prefer spicy food.
  4. Reduce heat to medium and simmer for 40 minutes, stirring occasionally, to let the sauce thicken and prevent sticking to the bottom.
  5. After 40 minutes, add 2 shiitake mushrooms, cut into bite-sized pieces, and simmer for another 5 minutes. Any mushrooms you have on hand, such as king oyster mushrooms, will pair well with the soy sauce braised pork ribs.
  6. Finish by sprinkling a little black pepper.

Cooking tips 💡

  • The moisture content of the meat and vegetables differs, so adjust the heat in the middle to prevent the sauce from burning.
