Yoon Yi-ryeon's Dongpo-Style Braised Pork Ribs

Ingredients needed 🛒6 servings

• 2 kg pork ribs and pork belly cut
• 3 handfuls of spiral-cut radish and carrot
• 1 red chili pepper
• 1 large green onion
• 5 shiitake mushrooms
• up to 10 cheongyang chili peppers
• for boiling: 1 bay leaf, 1 thumb-sized piece of ginger, 1 cup soju
• 100 ml Jin-ganjang
• 300–400 ml pear and onion juice
• 2 tbsp dark brown sugar and 2 tbsp for finishing
• 2 tbsp maesil syrup
• 2 tbsp cooking wine
• 2 tbsp minced garlic
• 1 tbsp minced ginger
• black pepper, 10 turns
• 0.3 tbsp coffee powder
• 2 tbsp sesame oil
• 2 tbsp starch syrup
• water as needed
