Cooking tips

  • Duck has a stronger gamey smell than chicken, so you must thoroughly scrape out the blood trapped deep between the ribs to achieve a clean broth.
  • Cooking the glutinous rice and mung beans in a pouch prevents the broth from becoming cloudy, and the cooked grains are easy to stir into the broth to make porridge.
  • If garlic chives are added from the beginning, they become tough, so add them at the end and let them cook gently in the residual heat of the broth.
  • When using a regular pot, you need to simmer for at least 2 hours until the duck becomes tender.
