- Water: 1L
- Green Onion: 150g
- Whole Peppercorns: 10g
- Ginger: 20g
- Bay Leaf: 1g
- Soup Soy Sauce: 3 tablespoons
- Water: 300ml
- Sugar: 60g
- Vinegar: 80ml
- Regular Soy Sauce: 80ml
- Tsuyu: 20ml
- Chives: 200g
- Sesame Oil: 3 tablespoons
- Gochugaru: 3 tablespoons
- Sesame Seeds: 2 tablespoons
- Pepper: 0.5 tablespoon
- Somen Noodles
Recipe 🍳
- Soak beef short ribs (2kg) and beef tendon (1kg) in water for at least 2 hours to remove blood. Beef Short Ribs: 2kg, Beef Tendon: 1kg.
- After 2 hours, dissolve 1 tablespoon of doenjang in water, add the beef short ribs and tendon, and blanch for 5 minutes. Doenjang: 1 tablespoon, Beef Short Ribs: 2kg, Beef Tendon: 1kg.
- After 5 minutes, place the following ingredients in a pressure cooker and steam for 25 minutes. Beef Tendon: 1kg, Beef Short Ribs: 2kg, Water: 1L, Green Onion: 150g, Whole Peppercorns: 10g, Ginger: 20g, Bay Leaf: 1g, Soup Soy Sauce: 3 tablespoons.
- After 25 minutes, remove the beef short ribs and tendon.
- In a separate pan, boil the following ingredients to make the sauce. Water: 300ml, Sugar: 60g, Vinegar: 80ml, Regular Soy Sauce: 80ml, Tsuyu: 20ml.
- In a bowl, combine 200g of chives with the following ingredients and toss. Chives: 200g, Soy Sauce Mixture: 150ml, Beef Short Rib Broth: 150ml, Sesame Oil: 3 tablespoons, Gochugaru: 3 tablespoons, Sesame Seeds: 2 tablespoons, Pepper: 0.5 tablespoon.
- Arrange the prepared chive salad on top of the braised beef short ribs and tendon.
