- Oxtail slices (3-4mm thick) 500g
- Yeondu (original) 3 tbsp
- Garlic 5 cloves
- Ginger 1/2 piece
- Honey 1 tbsp
- Raw perilla oil (or sesame oil) 1.5 tbsp
- Pepper a little
Recipe 🍳
- Prepare oxtail by slicing thinly to 3-4mm thickness for grilling (frozen state is easier to grill).
- Crush garlic with the side of a knife then finely chop so the aroma bursts when bitten; gently grate the ginger.
- In a bowl, mix Yeondu as the base with minced garlic, grated ginger, honey, and perilla oil to make a special sauce that enhances the meat's color.
- Evenly coat both sides of the prepared oxtail slices with the sauce and let marinate for a while.
- Place the marinated oxtail slices on a preheated wire grill or griddle without overlapping.
- Grill until the fat renders and the collagen at the edges curls up like a flower, turning golden brown.
- Flip occasionally to infuse smoky flavor, then finish with a light sprinkle of pepper.
- Prepare thinly sliced oxtail for grilling.
- Finely chop garlic and grate ginger.
- Mix Yeondu, garlic, ginger, honey, and perilla oil to make the marinade.
