Kang Leo's Yeondu So Kkori Gui

A unique grill that enhances the natural nuttiness and chewiness of oxtail by marinating with natural seasoning Yeondu and raw perilla oil.

🙋 Recommended for

  • Those who want to try a new grilled meat cut beyond oxtail stew or soup.
  • Those who want to maximize the natural umami of meat with a simple marinade.

Ingredients needed 🛒2 servings

  • Oxtail slices (3-4mm thick) 500g
  • Yeondu (original) 3 tbsp
  • Garlic 5 cloves
  • Ginger 1/2 piece
  • Honey 1 tbsp
  • Raw perilla oil (or sesame oil) 1.5 tbsp
  • Pepper a little

Recipe 🍳

  1. Prepare oxtail by slicing thinly to 3-4mm thickness for grilling (frozen state is easier to grill).
  2. Crush garlic with the side of a knife then finely chop so the aroma bursts when bitten; gently grate the ginger.
  3. In a bowl, mix Yeondu as the base with minced garlic, grated ginger, honey, and perilla oil to make a special sauce that enhances the meat's color.
  4. Evenly coat both sides of the prepared oxtail slices with the sauce and let marinate for a while.
  5. Place the marinated oxtail slices on a preheated wire grill or griddle without overlapping.
  6. Grill until the fat renders and the collagen at the edges curls up like a flower, turning golden brown.
  7. Flip occasionally to infuse smoky flavor, then finish with a light sprinkle of pepper.
  1. Prepare thinly sliced oxtail for grilling.
  2. Finely chop garlic and grate ginger.
  3. Mix Yeondu, garlic, ginger, honey, and perilla oil to make the marinade.
  4. Coat oxtail slices evenly with the marinade and let sit briefly.
  5. Place on a wire grill or griddle and grill over direct heat until golden.
  6. Sprinkle with pepper and enjoy while warm.

Cooking tips 💡

  • When grilling oxtail, do not trim the edge fat beforehand; it enhances the savory flavor and helps the collagen curl up chewy.
  • By using Yeondu instead of soy sauce, the meat's natural red color is preserved and the browning is improved.
  • Grill the oxtail slices straight from frozen to prevent sticking and ensure clean grilling.
