Cooking tips

  • Covering first with foil and then with the lid helps keep the seasoning from spattering and damaging the lid.
  • After reducing the ribs and transferring them to a plate, skim off most of the oil left in the pan before mixing in the scallions and lime juice.
  • It is better to brown only the outside of the ribs rather than cooking them completely at the searing stage.
