A traditional Milanese pork stew from Italy, slowly braised with pork offcuts and cabbage in white wine and tomato puree.

Ingredients needed 4 servings

Recipe

Cooking tips

  • Regular cabbage can be used instead of Savoy cabbage; add the outer and inner leaves separately as they cook at different rates.
  • Since this is a long-cooked dish, stir the bottom of the pot occasionally to prevent burning, and add a little water if it becomes too dry.
  • Serve with steamed white rice, polenta, or mashed potatoes according to your preference.

Recommended for

  • Those who want to try a rich and unique Western-style meat stew reminiscent of Korean gamjatang.
  • Those who want to make a special authentic Italian home-style dish using pork offcuts.
