Fabri Italian-style Braised Chicken Pizzaiola

- 1 whole chicken
- 1/2 onion
- 1 stalk celery
- 5 black olives
- 1 teaspoon anchovy paste
- 1 tablespoon oregano
- 1/2 cup white wine
- 1 can tomato sauce
- 1 tablespoon capers
- 2 cloves garlic
- 100g mozzarella cheese
- 1 tablespoon butter
Recipe 🍳
- Crush the garlic and slice the onion and celery into thin strips.
- Melt butter in a heated pan and sear the chicken pieces, cut into large chunks, until golden brown on the outside.
- Remove the seared chicken from the pan and set aside on a plate.
- In the same pan with the remaining chicken fat and butter, sauté the sliced onion and celery until translucent.
- Add the crushed garlic and anchovy paste, and sauté together to enhance the flavor.
- Return the chicken to the pan, pour in the white wine, and let the alcohol evaporate.
- Pour in the tomato sauce, add the capers, oregano, black pepper, and roughly chopped black olives, then simmer until the sauce is well incorporated.
- Once the chicken is fully cooked, reduce the heat to low, top with mozzarella cheese, and let it melt with residual heat to finish.
- Sear the chicken in a buttered pan until golden, then set aside.
- In the remaining oil, sauté the onion, celery, garlic, and anchovy paste, then add the chicken and white wine.
- Add the tomato sauce, capers, olives, and oregano, simmer, then top with mozzarella cheese and let it melt.

- If you don't have white wine, you can deglaze with soju for a great flavor.
- When simmering the chicken, the meat may break apart, so instead of stirring with a spatula, gently shake the pan to mix.
- After adding the cheese, keep the heat low so it melts smoothly without burning the bottom.
