Fabri Italian-style Braised Chicken Pizzaiola

  • 1 whole chicken
  • 1/2 onion
  • 1 stalk celery
  • 5 black olives
  • 1 teaspoon anchovy paste
  • 1 tablespoon oregano
  • 1/2 cup white wine
  • 1 can tomato sauce
  • 1 tablespoon capers
  • 2 cloves garlic
  • 100g mozzarella cheese
  • 1 tablespoon butter

Recipe 🍳

  1. Crush the garlic and slice the onion and celery into thin strips.
  2. Melt butter in a heated pan and sear the chicken pieces, cut into large chunks, until golden brown on the outside.
  3. Remove the seared chicken from the pan and set aside on a plate.
  4. In the same pan with the remaining chicken fat and butter, sauté the sliced onion and celery until translucent.
  5. Add the crushed garlic and anchovy paste, and sauté together to enhance the flavor.
  6. Return the chicken to the pan, pour in the white wine, and let the alcohol evaporate.
  7. Pour in the tomato sauce, add the capers, oregano, black pepper, and roughly chopped black olives, then simmer until the sauce is well incorporated.
  8. Once the chicken is fully cooked, reduce the heat to low, top with mozzarella cheese, and let it melt with residual heat to finish.
  1. Sear the chicken in a buttered pan until golden, then set aside.
  2. In the remaining oil, sauté the onion, celery, garlic, and anchovy paste, then add the chicken and white wine.
  3. Add the tomato sauce, capers, olives, and oregano, simmer, then top with mozzarella cheese and let it melt.

  • If you don't have white wine, you can deglaze with soju for a great flavor.
  • When simmering the chicken, the meat may break apart, so instead of stirring with a spatula, gently shake the pan to mix.
  • After adding the cheese, keep the heat low so it melts smoothly without burning the bottom.
