Ttukdak Hyung's Pilaf
A pilaf made with chicken thigh meat, carrots, and zucchini stir-fried in a soy sauce-based seasoning, then cooked until fluffy with added butter flavor.

- Chicken thigh meat: 600g
- Soy sauce: 50ml
- Oyster sauce: 2 tbsp
- Teriyaki sauce: 2 tbsp
- Chicken stock: 1 tbsp
- Minced garlic: 2 tbsp
- Cooking oil: 3 tbsp
- Butter: 25g
- Sugar: 2 tbsp
- Onion: 150g
- Carrot: 40g
- Zucchini: 60g
- Cheongyang chili pepper: 5g
- Indica rice: 300g
- Water: 360ml
- Fried egg
- Scallion
- Mayonnaise: 3 tbsp
- Oligosaccharide: 1 tbsp
- Lemon juice: 0.5 tbsp
Recipe 🍳
- Marinate 600g of chicken thigh meat with the following ingredients for 30 minutes: 600g chicken thigh meat, 50ml soy sauce, 2 tbsp oyster sauce, 2 tbsp teriyaki sauce, 1 tbsp chicken stock, 2 tbsp minced garlic.
- After 30 minutes, add the following ingredients to a pan and stir-fry: 3 tbsp cooking oil, 25g butter, marinated chicken.
- Once the chicken is cooked, add the following ingredients and stir-fry: 150g onion, 40g carrot, 60g zucchini, 5g Cheongyang chili pepper, 300g indica rice.
- If it starts to stick, add the following ingredients and continue to stir-fry until all the moisture has evaporated and only oil remains: 360ml water.
- Once all the moisture has evaporated and only oil remains, place kitchen towels on top, cover with a lid, and let it steam.
- Mix the following ingredients to make the sauce: 3 tbsp mayonnaise, 1 tbsp oligosaccharide, 0.5 tbsp lemon juice.
- Top the rice with the following ingredients to complete the dish: sauce, fried egg, scallion.
- Marinate chicken thigh meat with soy sauce, oyster sauce, etc.
- Sauté chicken thigh meat and vegetables like onions and carrots in butter, then add basmati rice and stir-fry.
- Add water, cook the rice, and serve with sauce and a fried egg.
Cooking tips 💡
- When stir-frying chicken thigh and rice for pilaf, add the soy sauce seasoning gradually, tasting as you go, to prevent it from becoming too salty.
