  • chicken 300g
  • salt a pinch
  • pepper a pinch
  • mirim 1 tablespoon
  • starch powder 1/2 cup
  • soy sauce 8 tablespoons
  • water 8 tablespoons
  • sugar 3 tablespoons
  • vinegar 5 tablespoons
  • green chili peppers 2
  • scallions 1/2 bunch
  • vegetable oil as needed

Recipe 🍳

  1. Make shallow cuts into the chicken and pat dry with kitchen paper to remove surface moisture.
  2. Season the prepared chicken with salt, pepper, and mirim, then marinate for a while.
  3. Lightly coat the marinated chicken with starch powder, then gently shake off any excess to prevent clumping.
  4. In a bowl, mix together soy sauce 8 tablespoons, water 8 tablespoons, sugar 3 tablespoons, and vinegar 5 tablespoons to make the sauce.
  5. Fry the chicken in heated oil over medium heat until fully cooked through and golden brown.
  6. Slice the fried chicken into bite-sized pieces and arrange on a serving plate.
  7. Top the chicken with finely chopped green chili peppers and thinly sliced scallions, then pour the prepared sauce over.
  1. Score the chicken and marinate with salt, pepper, and mirim.
  2. Coat with starch and fry in oil until crispy on the inside and out.
  3. Prepare the soy sauce glaze and serve over the fried chicken with scallions and chili peppers.
