Cooking tips

  • Pounding the tenderloin with a meat mallet along the grain can break the meat fibers, so pressing gently with your palm is much more tender.
  • Shake off the milk well before coating with flour to prevent sticking to your hands.
  • When you drop a breadcrumb into the oil and it rises after 3 seconds, the oil is about 160°C.
  • After frying, stand the tonkatsu upright to drain the oil rather than laying it flat, so the bottom stays crispy for a long time.
