Yeo Kyung-ok's Mayonnaise Shrimp

A sophisticated Chinese-style shrimp dish with a rich, smooth mayonnaise sauce enhanced with a refreshing lemon aroma

🙋 Recommended for

  • Those who want to enjoy a fresh and rich Chinese-style shrimp dish at home
  • Parents looking for a kid-friendly snack or a special dish to serve guests on occasion

Ingredients needed 🛒2 servings

  • shrimp (peeled and deveined) 15~20 pieces
  • lettuce 1/4 head
  • lemon 1/2
  • starch flour 1 cup
  • water 1/2 cup
  • mayonnaise 3 tablespoons
  • sugar 2 tablespoons
  • heavy cream 1 tablespoon
  • vinegar 1 tablespoon

Recipe 🍳

  1. Clean the shrimp by splitting the back and set aside. Tear the lettuce into bite-sized pieces and lay them on the bottom of the serving plate.
  2. Mix the cleaned shrimp with starch flour and water gradually, stirring until the batter coats the shrimp firmly.
  3. Heat oil to 170~180 degrees Celsius. Add the shrimp one at a time, letting them sit undisturbed for the first minute to prevent sticking or coating loss, then fry until crisp for 3~4 minutes.
  4. In a pan, combine 3 tablespoons mayonnaise, 2 tablespoons sugar, 1 tablespoon heavy cream, 1 tablespoon vinegar, and juice from half a lemon. Stir well and heat gently.
  5. Once the sauce begins to bubble, reduce heat or turn off the flame, then quickly toss in the fried shrimp to coat evenly.
  6. Arrange the mayonnaise shrimp attractively over the bed of lettuce on the serving plate to finish.
  1. Coat the shrimp with a mixture of starch and water, then fry until crispy. Prepare the lettuce.
  2. In a pan, mix mayonnaise, sugar, heavy cream, vinegar, and lemon juice to make the sauce.
  3. Quickly toss the fried shrimp in the sauce and serve on top of the lettuce.

Cooking tips 💡

  • After placing the shrimp in hot oil, avoid stirring for about 1 minute to prevent sticking or coating shedding.
  • If heavy cream is unavailable, a small amount of milk can be used for a similar creamy texture; omitting it will result in a cleaner, lighter flavor.
  • Instead of heating the sauce in a pan, you can mix all ingredients in a large bowl and simply toss the fried shrimp directly into the sauce.
