Place the meat, mayonnaise-side down, into a frying pan that has been sufficiently heated over high heat, without adding any oil.

While the meat is cooking, spread the same amount of mayonnaise evenly on the exposed side facing up.

Sear quickly for a total of 3 minutes—1 minute on the front, 1 minute on the back, and rotating to sear the sides—to complete a deep brown crust.
