Ingredients needed 🛒1 servings

  • Egg 2 pieces
  • Scallion 1/2 bunch
  • Mayonnaise 3 tablespoons
  • Red pepper powder 1 teaspoon
  • Rice 1 bowl
  • Light soy sauce 1 teaspoon
  • Tonkatsu sauce 1 teaspoon
  • Salt a pinch
  • Black pepper to taste

Recipe 🍳

  1. Heat vegetable oil in a pan, crack in 2 eggs, lightly season with salt, and scramble briefly while stirring. Remove and set aside.
  2. Add finely chopped scallions to the same pan and stir-fry with 3 tablespoons of mayonnaise until the fragrant scallion oil aroma rises.
  3. Once the rich scallion oil scent develops, add 1 teaspoon of red pepper powder and stir gently to create a spicy chili oil.
  4. Add 1 bowl of rice, 1 teaspoon of light soy sauce, and 1 teaspoon of tonkatsu sauce. Continue stir-frying over medium heat until the rice grains become fluffy and separate.
  5. Return the previously set-aside scrambled eggs to the pan and mix thoroughly. (If needed, adjust seasoning with additional salt.)
  6. Turn off the heat and generously sprinkle black pepper to finish.
  1. Scramble 2 eggs with a pinch of salt, then set aside.
  2. Sauté chopped scallions with mayonnaise and red pepper powder in order to bring out a fragrant chili oil.
  3. Combine rice, light soy sauce, tonkatsu sauce, and scrambled eggs, stir-fry until well mixed, then finish with black pepper.

Cooking tips 💡

  • Mayonnaise contains seasonings that can burn easily under high heat, so cook it over medium-low heat to gently extract the scallion aroma for best results.
  • Tonkatsu sauce adds umami and a distinctive tanginess, balancing the richness that mayonnaise might otherwise introduce.
  • When using instant rice, use it cold straight from the package—do not reheat it—to achieve a satisfyingly fluffy texture.
