Ingredients needed 🛒3 servings

  • 1 sea cucumber (soaked)
  • 2 abalones
  • 4–6 shrimp
  • 1/2 squid
  • 50g chicken breast
  • 2 shiitake mushrooms (or fresh shiitake)
  • 1 dried shiitake mushroom
  • 2 button mushrooms
  • a small amount of sliced bamboo shoot
  • 2 asparagus spears
  • 1 bunch bok choy
  • a small amount of carrot
  • 6–8 peeled ginkgo nuts
  • 1/2 green onion
  • a small amount of ginger
  • 2 cloves garlic
  • 3 tablespoons cooking oil
  • 1 tablespoon rice wine
  • 1 tablespoon soy sauce
  • 1/2 cup water (about 100ml)
  • 1 tablespoon oyster sauce
  • a pinch of chicken powder
  • appropriate amount of slurry
  • 1 tablespoon sesame oil

Recipe 🍳

  1. Slice green onion, ginger, and garlic thinly for aromatic oil preparation.
  2. Carve flower shapes into carrots, then cut mushrooms, bamboo shoots, asparagus, bok choy, and other vegetables into bite-sized pieces.
  3. Slice sea cucumber, abalone, and chicken breast diagonally; make fine crosshatch cuts on the inside of squid before cutting into serving-sized pieces.
  4. Blanch all prepared seafood, chicken, and vegetables together in boiling water until shrimp and squid are just cooked through—about 50–60% done—and remove excess moisture.
  5. Heat 3 tablespoons of cooking oil in a pan, add the sliced green onion, ginger, and garlic, and stir-fry over high heat for 10 seconds to release aroma.
  6. Add 1 tablespoon rice wine and 1 tablespoon soy sauce to create a savory base, then add all blanched ingredients at once and quickly toss and stir-fry.
  7. Pour in 1/2 cup of water and bring to a boil, then season with 1 tablespoon oyster sauce and a pinch of chicken powder.
  8. Gradually add slurry to adjust sauce consistency until it clings thickly to the ingredients, then drizzle with 1 tablespoon sesame oil and serve generously in a bowl.

  3. Sauté aromatic vegetables in a pan, then add rice wine, soy sauce, and blanched ingredients, and quickly stir-fry with water, oyster sauce, slurry, and sesame oil to finish.
