Ttukdak Hyung's Kongbiji Dakdoritang

Ingredients needed 🛒3 servings
- Water: 1L
- Salt: 1 spoon
- Sugar: 1 spoon
- Pepper: 1 spoon
- Chicken for Dakdoritang: 1kg
- Aged Kimchi: 500g
- Potatoes: 100g
- Carrots: 80g
- Onion: 70g
- Gochugaru: 3 spoons
- Soy Sauce: 3 spoons
- Mirin: 2 spoons
- Doenjang: 1 spoon
- Gochujang: 1 spoon
- Minced Garlic: 1 tbsp
- Beef Dashida (MSG Seasoning): 0.5 spoon
- Anchovy Broth: 700ml
- Green Onion: 100g
- Cheongyang Pepper: 5g
- Soaked Soybeans (for Kongbiji): 200g
- Water: 200ml
Recipe 🍳
- Boil the chicken in 1L of water with the following ingredients for 3 minutes. 1L water, 1 spoon salt, 1 spoon sugar, 1 spoon pepper, 1kg chicken for dakdoritang.
- After 3 minutes, rinse the blanched chicken and the pot thoroughly. Then, add the following ingredients to the pot and boil. Chicken, 500g aged kimchi, 100g potatoes, 80g carrots, 70g onion, 3 spoons gochugaru, 3 spoons soy sauce, 2 spoons mirin, 1 spoon sugar, 1 spoon doenjang, 1 spoon gochujang, 1 tbsp minced garlic, 0.5 spoon beef dashida, 700ml anchovy broth.
- Boil 200g of soybeans soaked overnight for over 15 minutes. Then, put them in a blender with 200ml of water and blend. 200g soaked soybeans, 200ml water.
- When the water has reduced by half, add the following ingredients and boil to complete! 100g green onion, 5g cheongyang pepper, kongbiji (soybean paste).
- Prepare ingredients and make the soup base.
- Add seasonings and main ingredients, then boil thoroughly.
- Check seasoning, then finish by adding garnish or aromatics.
