A homemade beef jerky made with rich and savory Korean beef top round, sweet and salty soy sauce seasoning, and dried simply in an air fryer.

Ingredients needed 🛒3 servings
- Korean beef top round, to cover the outer surface
- Cheongju or cooking wine, as needed
- Soy sauce, 1/2 cup
- Honey, 4 tbsp
- Sugar, 4 tbsp
- Anchovy sauce, 2 tbsp
- Sesame oil, 2 tbsp
- Minced garlic, 2 tbsp
- Ginger, a little
Recipe 🍳
- Pat the Korean beef top round dry with a paper towel, then cut into long slices about 1 cm thick.
- Soak the cut meat in cold water for 2 hours to fully remove the blood.
- After removing the blood, pour cheongju or cooking wine evenly over the meat and let it marinate for 1 hour. Then lightly pound with a meat mallet to tenderize the fibers.
- In a pot, combine 1/2 cup soy sauce, 4 tbsp honey, 4 tbsp sugar, 2 tbsp anchovy sauce, 2 tbsp sesame oil, 2 tbsp minced garlic, and a little ginger. Bring to a boil, then let cool completely.
- Pour the cooled seasoning over the meat, mix well, and marinate in the refrigerator for about 24 hours.
- Place the marinated meat in an air fryer and dry at the lowest temperature, turning every 30 minutes, until done.
- Cut the top round, soak in cold water for 2 hours and in cooking wine for 1 hour, then pound with a mallet.
- Add meat to the boiled and completely cooled soy sauce seasoning, and marinate in the refrigerator for a day.
- Dry in the air fryer at the lowest temperature, turning every 30 minutes.

- For beef jerky, use a lean cut like top round and slice along the grain for better chewing texture.
- Since the meat can cook, the seasoning must be boiled and completely cooled before pouring over the meat.
- The lowest temperature varies by air fryer model, so check frequently and flip to prevent burning.
