Cooking tips 💡

• Using toasted sesame oil alone can cause smoking due to its low smoke point; always mix it with regular vegetable oil in a 1:1 ratio when cooking.
• If shichimi is unavailable, substitute with a mix of chili powder, black pepper, and sesame seeds. Dried shiitake powder can also be replaced by grinding dried shiitake mushrooms.
• The key to perfect tadaki is to sear only the outer surface quickly over high heat without cooking through the center.
