Ttukdak Hyung's Hanshin Pocha-style Spicy Braised Chicken Feet

A spicy, soupy chicken feet dish inspired by Hanshin Pocha, made with chicken feet, bean sprouts, and grated pear in a spicy pepper paste sauce.

Ingredients needed 🛒2 servings

  • 1kg chicken feet
  • 2L water
  • 1 tbsp whole peppercorns
  • 1 tbsp doenjang
  • 20g ginger
  • 3 tbsp gochujang
  • 5 tbsp gochugaru
  • 5 tbsp soy sauce
  • 3 tbsp sugar
  • 3 tbsp corn syrup
  • 2 tbsp oyster sauce
  • 1.5 tbsp minced garlic
  • 1 tbsp beef bouillon powder
  • 1 tbsp black pepper
  • 180ml grated pear juice
  • 200g bean sprouts
  • 2 tbsp coarse salt
  • 6 ladles bean sprout broth
  • 3 eggs
  • 90ml milk
  • 15g Cheongyang chili peppers
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds

Recipe 🍳

  1. Add enough water to cover the chicken feet, along with whole peppercorns, doenjang, and ginger. Boil for 30 minutes, then rinse off impurities under cold water.
  2. Mix gochujang, gochugaru, soy sauce, sugar, corn syrup, oyster sauce, minced garlic, bouillon powder, black pepper, and pear drink. Marinate the chicken feet in this mixture for 1 hour.
  3. Boil the bean sprouts in salted water for 10 minutes. Set the bean sprouts aside and reserve 6 ladles of the bean sprout broth.
  4. In a pot, combine the bean sprout broth and the marinated chicken feet. Simmer over medium heat for 30 minutes.
  5. Add the boiled bean sprouts and Cheongyang chili peppers, simmer once more, and finish with sesame oil and sesame seeds.
  6. Mix eggs, water, milk, salt, and bouillon powder to make soft steamed eggs and serve on the side.
