Ttukdak Hyung's Clean Chicken Kalguksu

Clean chicken kalguksu, made by stir-frying or mixing chicken, kalguksu noodles, and carrots in a spicy pepper sauce for a spicy and refreshing noodle soup.

Ingredients needed 🛒2 servings

  • 1 chicken
  • 3 tbsp cooking oil
  • 500ml water
  • 500ml beef bone broth
  • 6 whole garlic cloves
  • 5 Cheongyang chili peppers in total
  • 1/2 tbsp salt
  • 2 servings kalguksu noodles
  • 1 potato
  • 1/5 carrot
  • 1/4 zucchini
  • 1 tbsp beef dashida (seasoning)
  • 1 green onion
  • 1 tbsp minced garlic
  • 2 tbsp chili powder
  • 3 tbsp soy sauce
  • 1 tbsp fish sauce
  • A little black pepper

Recipe 🍳

  1. Julienne the potato, carrot, and zucchini. Finely chop the green onion and Cheongyang chili pepper to prepare the topping ingredients.
  2. Mix half of the minced green onion, minced Cheongyang chili pepper, minced garlic, chili powder, soy sauce, and fish sauce to make the topping.
  3. Cut the chicken in half and pan-fry it, skin-side down first, in a pan with cooking oil until golden brown.
  4. Once both sides are browned, add water and beef bone broth, along with whole garlic cloves and Cheongyang chili peppers, and simmer for 30 minutes.
  5. Remove the chicken and solids. Add the potato, zucchini, and carrot to the broth in order.
  6. When the broth boils, season with dashida. Separately boil the kalguksu noodles and place them in a bowl.
  7. Top the noodles with the broth, half a chicken, green onions, the seasoned topping, and pepper.
  1. Pan-fry the chicken, skin-side down first, until golden brown.
  2. Add beef bone broth and aromatics, then simmer for 30 minutes.
  3. Add vegetables and season to taste.
  4. Top the boiled kalguksu noodles with broth, chicken, and green onion topping.

  • Boiling the noodles separately reduces starch, resulting in a clearer broth.
  • Add the seasoned green onion topping little by little according to your preference.
