Ingredients needed 🛒3 servings
- vegetable oil: 500ml
- green onion: 50g
- ginger: 20g
- chicken thigh meat: 1kg
- water: 180ml
- mirin: 180ml
- haseon soy sauce: 70ml
- oyster sauce: 2 tablespoons
- nokcho: 2 tablespoons
- sugar: 2 tablespoons
- star anise: 1g
- young mustard greens
- potato
- seasoning salt
- slurry
Recipe 🍳
- Heat 500ml of vegetable oil in a pan, then add 50g green onion, 20g ginger, and 1kg chicken thigh meat. Fry until golden brown.
- Once the chicken is golden, transfer it to another pan and remove the solids.
- Add 180ml water, 180ml mirin, 70ml haseon soy sauce, 2 tablespoons oyster sauce, 2 tablespoons nokcho, 2 tablespoons sugar, and 1g star anise to the fried chicken. Cover and simmer over low heat for 40 minutes.
- After 40 minutes, transfer the braised chicken to a serving dish.
- Dice the potato and fry it; blanch the young mustard greens. Sprinkle seasoning salt on the fried potatoes.
- Add slurry to the remaining sauce to adjust thickness, then pour over or serve alongside the chicken.
- Fry chicken thigh meat until golden, then sauté green onion and ginger in another pan to build aroma.
- Add the fried chicken to a sauce containing haseon soy sauce, oyster sauce, star anise, and other seasonings. Cover and braise over low heat.
- Serve with fried potatoes and blanched young mustard greens for a hearty, satisfying finish.
