Ttukdak Hyung's Cheese Flying Fish Roe Shrimp Bake

A luxurious baked shrimp dish made by stuffing jumbo king tiger shrimp with a popping flying fish roe mayonnaise sauce and plenty of mozzarella and cheddar cheese, then baked to perfection.

  • 2 king tiger shrimp
  • Flying fish roe (as needed)
  • Small amount of mirin
  • Mayonnaise (as needed)
  • A pinch of seasoned salt
  • A pinch of pepper
  • Plenty of mozzarella cheese
  • 1 slice cheddar cheese

Recipe 🍳

  1. Cut the center of the large back shell of the king tiger shrimp lengthwise with scissors, cleanly remove the dark intestinal tract, and spread the meat wide open to the sides.
  2. In a bowl, mix flying fish roe, mirin, mayonnaise, seasoned salt, pepper, and mozzarella cheese until gooey to create the flying fish roe cheese filling.
  3. Spoon the prepared flying fish roe mayo cheese filling generously into the opened space on the shrimp's back, pressing firmly to fill abundantly.
  4. Tear the yellow cheddar cheese into small pieces by hand and place generously on top for visual effect and rich flavor as garnish.
  5. Carefully place the stuffed shrimp in an air fryer preheated to 180°C and bake for about 20 minutes until golden brown and appealing.
  1. Split the back of the king tiger shrimp lengthwise, remove the vein, and spread the meat wide open to the sides.
  2. Mix flying fish roe, mirin, mayonnaise, salt, pepper, and mozzarella cheese to make the filling.
  3. Top the shrimp with the filling and cheddar cheese, then bake in an air fryer at 180°C for 20 minutes.

Cooking tips 💡

  • When cutting the shrimp's back, cut all the way to just before the tail, and tap the inner meat with the back of a knife to keep it spread wide without shrinking back.
  • If expensive king tiger shrimp are hard to find, you can use more readily available black tiger shrimp or several large prawns placed side by side for an equally excellent result.
