Ttukdak Hyung's Usamgyeop Curry Cream Pasta

A rich and thick curry cream pasta made by sautéing savory usamgyeop (beef belly) and onion, then simmering a sauce of milk, curry powder, and cheddar cheese.

Ingredients needed 🛒1 servings

  • Usamgyeop 150g
  • Onion 150g
  • Milk 360ml
  • Curry powder 2 spoons
  • Cheddar cheese 30g (1 slice)
  • Chicken stock 1 spoon
  • Pre-cooked pasta noodles 150g
  • Crushed pepper a little
  • Parsley powder a little

Recipe 🍳

  1. Thinly slice the onion. Boil the pasta noodles in salted water in advance and drain.
  2. In a dry pan, add 150g of usamgyeop and 150g of sliced onion. Sauté until the meat fat renders and the onion becomes limp.
  3. Pour 360ml of milk into the pan, then add 2 spoons of curry powder, 30g of cheddar cheese, and 1 spoon of chicken stock for umami. Add them in order.
  4. Stir well to prevent lumps, and bring to a boil to create a thick curry cream base.
  5. Once the sauce boils, add 150g of pre-cooked pasta noodles. Simmer for about 2-3 minutes, stirring, until the sauce coats the noodles and reaches the desired thick consistency.
  6. Twirl the pasta onto a plate, and garnish with a sprinkle of crushed pepper and parsley powder.

Cooking tips 💡

  • If you don't have usamgyeop, cocktail shrimp or thinly sliced pork also work very well with the sauce.
  • Cheddar cheese makes the sauce thicker and saltier, so it's an essential substitute for heavy cream.
