2 tbsp olive oil

1/2 tsp flour (for thickening)

2 tbsp grated Parmesan cheese

Pinch of salt

Pinch of black pepper

1.5L water (for boiling pasta)

Recipe

Pour 1.5L of water into a pot, and once boiling, add 1 tbsp salt and a little olive oil. Boil the pasta for about 6-7 minutes until slightly undercooked (al dente).
Once the pasta is cooked, drain it, but reserve the pasta water for adjusting the sauce consistency.
Cut the bacon into bite-sized pieces, finely chop the onion, and thinly slice the button mushrooms.
Heat 2 tbsp of olive oil in a pan over medium-low heat. Add the bacon and chopped onion, and sauté until the onion becomes translucent and sweet.
When the onion starts to turn golden, add the butter and let it melt. Then, add 1 cup of milk and the sliced mushrooms, and bring to a simmer.
Once the sauce is simmering, add the cooked pasta and mix. Sprinkle a very small amount of flour over the sauce and stir to dissolve, preventing lumps and thickening the sauce.
Simmer until the sauce is reduced and coats the pasta. Season with salt to taste. If the sauce becomes too thick, add some of the reserved pasta water to adjust.
Turn off the heat, sprinkle with grated Parmesan cheese and black pepper, and toss the pasta and sauce with the residual heat of the pan to finish.

Boil pasta in salted water until al dente, then drain, reserving pasta water.
Sauté bacon and chopped onion in olive oil until softened. Add butter, milk, mushrooms, and pasta, then simmer.
Thicken with a small amount of flour, season with salt, then turn off heat and mix in Parmesan cheese and pepper.

Cooking tips

Adding plenty of salt to the pasta water seasons the pasta itself, preventing it from tasting bland, and the reserved pasta water is useful for the sauce.
Sautéing the onions over medium-low heat for a long time, without burning, maximizes their sweetness and flavor, which is crucial for the sauce's depth.
Instead of heavy cream, a small amount of flour can create a thick, rich sauce texture similar to restaurant-style pasta.
If the sauce reduces too much during cooking, don't panic. Add a ladleful of the reserved warm pasta water at a time to achieve your desired consistency.
