Ttukdak Hyung's Cod Roe and Tofu Braise

A spicy braised dish of tofu, cod milt, and pollock roe, seasoned with chili paste and finished with a spicy kick from Cheongyang peppers.

Ingredients needed 🛒4 servings

  • Cod milt: 400g
  • Pollock roe: 300g
  • Tofu: 500g
  • Soju
  • Green onion: 80g
  • Cheongyang chili pepper: 25g
  • Sesame seeds: 1 tbsp
  • Crown daisy: 20g
  • Water: 540ml (3 cups)
  • Gochugaru (red pepper flakes): 6 tbsp
  • Soy sauce: 3 tbsp
  • Fish sauce: 3 tbsp
  • Mirin: 3 tbsp
  • Sugar: 1 tbsp
  • Cooking oil: 1 tbsp
  • Garlic: 2 tbsp
  • Black pepper: 0.3 tbsp
  • Anchovy Dashida (stock powder): 1 tbsp
  • Beef Dashida (stock powder): 1 tbsp
  • Starch: 1 tbsp

Recipe 🍳

  1. Blanch the roe and milt. Pour water into a pot and bring to a boil. Add the roe and milt and blanch for 5 minutes. Remove the blanched roe and milt.
  2. Make the seasoning sauce. Add water. Add gochugaru. Add soy sauce. Add fish sauce. Add mirin. Add sugar. Add cooking oil. Add minced garlic. Add black pepper. Add anchovy Dashida. Add beef Dashida. Add starch. Mix well.
  3. Make the Al-goni Dubu Jorim. Place tofu at the bottom of the pot. Arrange the roe and milt on top. Pour the seasoning sauce and bring to a boil. Add sliced green onion. Add finely chopped Cheongyang chili pepper and boil. Add sesame seeds and crown daisy, then boil for 1 more minute to finish. It's done.
  1. Prepare ingredients into bite-sized pieces.
  2. Add seasoning and mix or stir-fry, then adjust taste.
  3. Serve on a plate while the texture is still fresh.
