pork for stir-fry (shoulder or loin) 600g
soju 6 tablespoons
sugar 1 tablespoon + half tablespoon
minced garlic 1 tablespoon
black pepper 4 pinches
fermented soy sauce 3 tablespoons
red chili powder 2 tablespoons
gochujang generously 1 tablespoon
oyster sauce 1 tablespoon
doubanjiang 1 tablespoon
onion 1 large
green onion 1 stalk
green chili peppers 2
carrot 50g
sesame seeds 1 tablespoon
toasted sesame oil 1 tablespoon

Recipe

Cut the pork into large, bite-sized pieces.
Add soju 6 tablespoons, sugar 1 tablespoon, minced garlic 1 tablespoon, and black pepper 4 pinches to the pork. Mix well and let marinate in a quiet place for 30 minutes.
While the pork marinates, mix fermented soy sauce 3 tablespoons, red chili powder 2 tablespoons, gochujang generously 1 tablespoon, sugar half tablespoon, oyster sauce 1 tablespoon, and doubanjiang 1 tablespoon to make a thick sauce.
Chop the onion into coarse strips, slice green onion and green chili peppers into large diagonal pieces, and julienne the carrot into long, thin strips.
Heat a pan or wok over high heat. Add the marinated pork and continue cooking on high heat throughout the entire process.
Once the pork surface is cooked and the juices have disappeared, add the prepared sauce and stir-fry thoroughly.
Continue stir-frying until all moisture has evaporated and the sauce clings thickly to the meat.
When the pork is well-charred, add the carrots first, followed by onion, green onion, and green chili peppers one after another, and stir-fry quickly over high heat.
When the edges of the onion turn slightly translucent and begin to wilt, add sesame seeds 1 tablespoon and toasted sesame oil 1 tablespoon, mix well, and immediately turn off the heat.

Marinate pork with soju, sugar, garlic, and pepper for 30 minutes; prepare vegetables.
Mix fermented soy sauce, red chili powder, gochujang, oyster sauce, and doubanjiang to create the sauce.
Stir-fry pork over high heat, add sauce and cook until dry and sticky, then quickly stir in vegetables and finish with sesame oil.
