Thinly sliced pork loin rolled with a block of mozzarella cheese, then breaded and deep-fried until crispy to create a cheese-string donkatsu.

- Pork loin (as needed)
- Whole mozzarella cheese block (as needed)
- Seasoned salt (a pinch)
- Black pepper (a pinch)
- Flour (as needed)
- Eggs (as needed)
- Bread crumbs (as needed)
- Cooking oil (as needed)
Recipe 🍳
- Remove the silver skin from the pork loin, slice it thinly, and pound it as thin as possible with a meat mallet.
- Lightly season the flattened meat with seasoned salt and black pepper.
- Cut the whole mozzarella cheese block into stick shapes of suitable size.
- Place the mozzarella stick on the flattened pork loin and roll it up tightly so the cheese does not leak out.
- Coat the rolled meat thoroughly in flour, egg wash, and bread crumbs in that order.
- Deep-fry in oil preheated to 150–160°C (300–320°F) until the cheese inside is fully melted and the meat is cooked through, until golden brown.
- When cutting the fried cheese donkatsu, do not cut all the way through; instead, slice only through the outer meat portion to create the effect of the cheese stretching out.
- Season thinly pounded pork loin with salt and pepper.
- Tightly roll the whole mozzarella cheese in the meat, then coat with flour, egg, and bread crumbs.
- Deep-fry in 150–160°C oil until golden, then lightly cut only the outer meat and serve.
Cooking tips 💡
- Wrap the cheese completely with the meat to prevent it from leaking out when melted, which could cause oil splattering.
- When cutting the cheese donkatsu in half, do not cut through the center cheese; only cut the outer meat so the cheese stretches out without breaking.
