Seonkyoung Longest's Spicy Jokbal

This is spicy jokbal made by thoroughly simmering pork trotters with aromatic vegetables and broth, serving half as classic jokbal and the other half tossed in a spicy cheongyang chili pepper powder sauce and broiled until golden brown.

Cooking tips

  • Discard the first boiling liquid because it contains a lot of blood and impurities, then rinse and simmer in clean broth to reduce off flavors and keep the broth clean.
  • Under the broiler the meat is close to the top heat and burns easily, so flip it and check the color while broiling briefly to add broiled flavor without burning.
  • If the seasoning reduces too thick, add a little water to adjust the consistency and add more rice Jocheong to taste for shine.
