• 1 piece boneless jokbal meat (shank)
• 2 onions
• 1 large green onion
• 1 knob ginger
• 1 chili pepper
• 2–3 star anise
• 1 cup Jin-ganjang
• a little dark soy sauce
• 1 cup cheongju
• 1 cup cooking wine
• 1/2 cup sugar
• 2 tablespoons maesil-cheong
• 2 tablespoons starch syrup
• 1 tablespoon saeujeot
