Mix 1 tbsp gochujang, 2 tsp sugar, 1 tbsp mirim, 0.25 tsp grated ginger, lemon zest, lemon juice, and a pinch of salt.
Reserve 1 tbsp of the sauce. Add the chicken thighs to the remaining sauce, coat both sides, and marinate for 15–30 minutes.
Place 2 tbsp sesame oil and the marinated chicken in a cold pan (do not preheat). Turn the heat to medium.
Cook the chicken for 5 minutes, then flip. Continue cooking for about 3 more minutes, flipping occasionally to prevent burning.
Each time you flip, brush the reserved sauce onto the chicken. Cook through until the chicken is done and the glaze is shiny.
Remove from heat and serve warm with rice or bread.
