Okjubu's Tomato Shrimp Curry

- shrimp 10~12 pieces
- tomato 1 piece
- potato 2 pieces
- carrot 1/2 piece
- onion 1 piece
- solid curry 2~3 pieces
- chicken stock 1 tablespoon
- heavy cream 1/3 cup
- water as needed
- vegetable oil as needed
Recipe 🍳
- Cut potato, carrot, and onion into bite-sized pieces, and prepare the tomato by removing the stem.
- Heat vegetable oil in a pan, then sauté potato, carrot, and onion until the edges become translucent.
- Add the whole tomato to the sautéed vegetables, pour in enough water to cover the ingredients, and simmer thoroughly.
- Once the tomato softens, remove the skin and mash it gently with a utensil.
- Add the curry pieces and stir well to dissolve without clumping, then simmer gently.
- Add the cleaned shrimp and cook for about 4 minutes until fully cooked.
- Stir in chicken stock and heavy cream for a smoother flavor, then bring to a brief boil to finish.
- Prepare vegetables and tomato.
- Put vegetables, tomato, and water in a pan and simmer thoroughly.
- Remove tomato skin, mash it, then add curry and mix well.
- Add shrimp and cook for 4 minutes, then finish with chicken stock and heavy cream.

- The tomato skin naturally separates during boiling and can be easily removed with tongs.
- Shrimp becomes tough if overcooked, so it's best to add them at the final stage and cook for no more than 4 minutes.
