Ingredients needed 🛒1 servings
- squid 1 whole
- bean sprouts 100g
- green onion 1/2 bunch
- green chili pepper 1
- tangy kimchi 1/2 cup
- stock packet 1
- red pepper powder 1 tablespoon
- minced garlic 1 tablespoon
- shrimp paste 1 teaspoon
- anchovy sauce 1 tablespoon
- rice 1 bowl
Recipe 🍳
- Chop green onion and green chili pepper into small pieces. Score the squid body with a crisscross pattern and cut into bite-sized pieces.
- Pour water into a pot and add the stock packet to brew a rich base broth.
- Once the broth comes to a boil, remove the stock packet, then add the chopped tangy kimchi and prepared squid.
- Add 1 tablespoon red pepper powder, 1 tablespoon minced garlic, 1 teaspoon shrimp paste, and 1 tablespoon anchovy sauce. Simmer briefly.
- When the squid is cooked through, add the bean sprouts, green onion, and green chili pepper. Boil once more until the bean sprouts are crisp but tender.
- Place warm rice into a bowl, then pour in plenty of hot broth and solid ingredients.
- Cut green onion, chili pepper, and squid into appropriate sizes.
- Brew stock in a pot, then add tangy kimchi and scored squid and bring to a boil.
- Season with red pepper powder, garlic, shrimp paste, and anchovy sauce for a refreshing flavor.
- Add bean sprouts, green onion, and chili pepper, boiling just until crisp, then pour over rice.
Cooking tips 💡
- Using shrimp paste when adjusting seasoning gives a clean, refreshing umami without cloudiness.
- After adding bean sprouts, keep the lid off and cook briefly to maintain their crisp texture.
