Ingredients needed 🛒2 servings
- fresh clams with shells, as needed
- potato 1 piece
- carrot 1/3 piece
- onion 1/2 piece
- celery 1 stalk
- olive oil a little
- salt two pinches
- pepper two pinches
- Otsuka cream soup powder 1 tablespoon
- milk 150ml
- heavy cream 100ml
- sugar 1/3 teaspoon
- Zek Cracker as needed
Recipe 🍳
- In a pot, add fresh clams with their shells and enough water to just cover them. Boil until the clams open, then turn off the heat and separate the clams from the broth.
- Dice the potato, carrot, onion, and celery into bite-sized pieces to enjoy their texture.
- Heat a pan, add olive oil, then sauté the diced vegetables with salt and pepper (two pinches each) for about 5 minutes.
- Once the vegetables are cooked, slowly pour in the boiled clam meat and broth, then simmer together for a few minutes.
- Mix Otsuka cream soup powder (1 tablespoon) into 150ml of milk until fully dissolved, then gradually add it to the boiling broth and stir well.
- When the soup reaches your desired thickness, add heavy cream (100ml) and sugar (1/3 teaspoon), then gently simmer to finish.
- Serve the finished soup in bowls and sprinkle crushed Zek Crackers on top as a garnish.
- Boil clams with shells to make broth, then dice the vegetables into small pieces.
- Sauté the vegetables in olive oil in a pan, then add clams and broth and bring to a boil.
- Add the cream soup powder mixed with milk, followed by heavy cream and sugar, then simmer and serve with crushed crackers.
Cooking tips 💡
- Always boil clams with their shells intact to extract a much deeper, richer seafood umami flavor from the broth.
- When pouring the clam broth, carefully transfer only the clear top layer to avoid sediment or impurities at the bottom.
- Do not add heavy cream too early or cook it for too long, as its rich aroma and flavor will diminish; always add it at the final stage of cooking.
- Using Zek Crackers instead of regular crackers creates a perfect harmony with the clam chowder, thanks to their distinctive salty and nutty taste.
