Okjubu's Clam Chowder

  • 1 serving of steamed clam meat
  • 1 potato
  • 1/2 onion
  • generous amount of butter
  • 1 tablespoon of cooking oil
  • 1/2 tablespoon of flour
  • 1 cup of milk
  • 1/2 cup of heavy cream
  • a small amount of chicken stock
  • 1/2 tablespoon of clam dashi
  • appropriate amount of baguette bread

Recipe 🍳

  1. Rinse the clam meat thoroughly and remove all moisture completely.
  2. Chop the potato and onion finely.
  3. In a pot, add generous butter and swirl in cooking oil, then sauté the chopped potato and onion.
  4. Once the vegetables are cooked and fragrant, add 1/2 tablespoon of flour and stir together to enhance the richness.
  5. Pour in 1 cup of milk and 1/2 cup of heavy cream, then add a small amount of chicken stock and 1/2 tablespoon of clam dashi, and bring to a boil.
  6. When the broth thickens, add the clam meat and simmer briefly before serving with baguette bread.

  2. Heat butter and cooking oil in a pot and sauté the vegetables.
  3. Add flour and stir with the vegetables to make a roux.
  4. Add milk, heavy cream, chicken stock, and clam dashi, then bring to a boil.

  • Do not cook the clam meat for too long from the beginning, or it will become tough—add it only at the end and heat just briefly.
