Okjubu's Clam Chowder

- 1 serving of steamed clam meat
- 1 potato
- 1/2 onion
- generous amount of butter
- 1 tablespoon of cooking oil
- 1/2 tablespoon of flour
- 1 cup of milk
- 1/2 cup of heavy cream
- a small amount of chicken stock
- 1/2 tablespoon of clam dashi
- appropriate amount of baguette bread
Recipe 🍳
- Rinse the clam meat thoroughly and remove all moisture completely.
- Chop the potato and onion finely.
- In a pot, add generous butter and swirl in cooking oil, then sauté the chopped potato and onion.
- Once the vegetables are cooked and fragrant, add 1/2 tablespoon of flour and stir together to enhance the richness.
- Pour in 1 cup of milk and 1/2 cup of heavy cream, then add a small amount of chicken stock and 1/2 tablespoon of clam dashi, and bring to a boil.
- When the broth thickens, add the clam meat and simmer briefly before serving with baguette bread.
- Wash the clam meat and dry thoroughly; chop the vegetables.
- Heat butter and cooking oil in a pot and sauté the vegetables.
- Add flour and stir with the vegetables to make a roux.
- Add milk, heavy cream, chicken stock, and clam dashi, then bring to a boil.
- Add the clam meat and simmer briefly, then serve with baguette.
