Ttukdak Hyung's Suyuk Jeongol

A Suyuk Hot Pot with a rich broth, made by simmering pork belly, napa cabbage, and bean sprouts in a spicy chili sauce.

Ingredients needed 🛒4 servings

  • Water: 2L
  • Doenjang: 1 tbsp
  • Whole Garlic
  • Whole Peppercorns
  • Pork Belly: 600g
  • Beef Bone Broth: 500ml
  • Bean Sprouts
  • Napa Cabbage
  • Green Onion
  • Chives
  • Soy Sauce: 2 spoons
  • Vinegar: 2 spoons
  • Water: 2 spoons
  • Sugar: 0.5 spoon
  • Minced Garlic: 0.5 spoon
  • Cheongyang Pepper
  • Mustard

Recipe 🍳

  1. Add the following ingredients to a pot and boil for 40 minutes. 1) Water 2L 2) Doenjang 1 tbsp 3) Whole Garlic 4) Whole Peppercorns 5) Pork Belly 600g.
  2. When the water reduces to 500ml, remove the meat and whole peppercorns, mash the garlic, then add 500ml of beef bone broth and boil. 1) Beef Bone Broth 500ml.
  3. Add the following ingredients to the pot. 1) Bean Sprouts 2) Napa Cabbage 3) Green Onion 4) Chives 5) Suyuk (Boiled Pork) 6) Doenjang Broth.
  4. While the lid is closed and boiling, mix the following ingredients to make the essential sauce. 1) Soy Sauce 2 spoons 2) Vinegar 2 spoons 3) Water 2 spoons 4) Sugar 0.5 spoon 5) Minced Garlic 0.5 spoon 6) Cheongyang Pepper 7) Mustard.
  5. Open the lid and dip the suyuk in the sauce to finish.
  1. Prepare the main ingredients and pre-mix the seasoning or broth ingredients.
  2. Add ingredients to the pot in order and boil sufficiently.
  3. Adjust the final seasoning and add aromatic ingredients to finish.

Cooking tips 💡

  • Boil until the water reduces from 2L to 500ml.
  • Add 500ml of beef bone broth and boil until the broth, which becomes 1L, reduces to 500ml.
