- 1 whole radish
- oligosaccharide (to taste)
- seasoned salt (to taste)
- gochugaru (to taste)
- vinegar (to taste)
- anchovy sauce (to taste)
- plum syrup (to taste)
- sesame oil (to taste)
- sesame seeds (generous amount)
- minced garlic (to taste)
- green onion (to taste)
Recipe 🍳
- Using a julienne peeler, slice the radish into thin, long strips of uniform thickness.
- Add oligosaccharide and seasoned salt to the julienned radish, mix well, and let it marinate for 1 hour to preserve the crunchy texture.
- Place the marinated radish in a strainer to thoroughly drain the released liquid, achieving a firm texture.
- Add gochugaru, vinegar, anchovy sauce, plum syrup, sesame oil, and sesame seeds to the drained radish in order.
- Finally, add minced garlic and finely chopped green onion, then gently toss until evenly coated without the seasoning clumping.
- Julienne the radish and marinate with oligosaccharide and seasoned salt for 1 hour.
- Drain the marinated radish completely using a strainer.
- Add gochugaru, vinegar, anchovy sauce, garlic, green onion, and all other seasoning ingredients, then toss well.
