- daikon 1/2 head
- onion 1/2 medium
- green onion 3 stalks
- salt 1 tablespoon
- sugar 2 tablespoons
- red pepper powder 5 tablespoons
- anchovy sauce 1 tablespoon
- sesame oil 1 tablespoon
- minced garlic 1 tablespoon
- vinegar 1 tablespoon
- toasted sesame seeds to taste
- monosodium glutamate 1/2 tablespoon (optional)
Recipe 🍳
- Rinse the daikon thoroughly under running water, then julienne it into even-sized strips using a mandoline or knife.
- Julienne the onion into similar thin strips, and cut the green onion into 3–4 cm lengths.
- In a large bowl, combine the julienned daikon and onion, then add salt, sugar, red pepper powder, anchovy sauce, minced garlic, sesame oil, and monosodium glutamate in sequence.
- Mix vigorously by hand until the seasonings are evenly distributed and the red pepper powder coats the vegetables uniformly without clumping.
- Once the vegetables have absorbed the dressing, add the vinegar, reserved green onion, and toasted sesame seeds, then gently toss one final time to finish.
- Julienne the daikon and onion, and cut the green onion into appropriate pieces.
- In a bowl, combine all seasonings except vinegar, green onion, and sesame seeds, and mix well.
