  • onion 1/2 medium
  • green onion 3 stalks
  • salt 1 tablespoon
  • sugar 2 tablespoons
  • red pepper powder 5 tablespoons
  • anchovy sauce 1 tablespoon
  • sesame oil 1 tablespoon
  • minced garlic 1 tablespoon
  • vinegar 1 tablespoon
  • toasted sesame seeds to taste
  • monosodium glutamate 1/2 tablespoon (optional)

Recipe 🍳

  1. Rinse the daikon thoroughly under running water, then julienne it into even-sized strips using a mandoline or knife.
  2. Julienne the onion into similar thin strips, and cut the green onion into 3–4 cm lengths.
  3. In a large bowl, combine the julienned daikon and onion, then add salt, sugar, red pepper powder, anchovy sauce, minced garlic, sesame oil, and monosodium glutamate in sequence.
  4. Mix vigorously by hand until the seasonings are evenly distributed and the red pepper powder coats the vegetables uniformly without clumping.
  5. Once the vegetables have absorbed the dressing, add the vinegar, reserved green onion, and toasted sesame seeds, then gently toss one final time to finish.
