Recipe

Clean the fresh seasonal blue crabs thoroughly under running water using a kitchen brush, scrubbing the shell and between the legs.
Insert the tip of a knife deep into the gap of the pointed mouth area, then twist sideways in a zigzag motion to completely drain the transparent blood inside.
In a small sauce bowl, mix together soft mayonnaise, melted butter (microwaved), minced garlic (for that Korean flavor), and soy sauce (to balance the richness) to create the mayo butter sauce.
Using scissors, neatly cut off the pointed abdominal flap on the underside of the crab, then carefully pry open the shell to expose the carapace.
Spoon the prepared mayo butter sauce into the opened carapace cavity (where the yellow paste and internal organs are attached), filling it generously without overflowing, then firmly close the shell.
Place the sauce-filled crabs flat in the preheated air fryer basket at 180°C (356°F) and air-fry for 40 minutes until deeply cooked.

Clean the crabs thoroughly with a brush, then stab the mouth area with a knife to completely remove internal blood.
Mix mayonnaise, melted butter, minced garlic, and soy sauce to create a savory garlic butter sauce.
Fill the inner cavity of the crab shell with the sauce, close the lid, and air-fry at 180°C (356°F) for 40 minutes.

Cooking tips

It is essential to pierce the crab's mouth with a knife to properly drain the transparent liquid blood; otherwise, during air-frying, the protein will coagulate and create a strong fishy smell.
For autumn cooking, choose male crabs ('suge') that are fully packed and offer great value; they yield thicker, sweeter meat.
After eating all the grilled crab meat, mix the remaining mayo butter sauce with the crab innards on the shell, add warm rice and seasoned seaweed flakes, and stir for a perfect side dish.
