Ttukdak Hyung's Kimchi Mandu Jeongol

  • Glass noodles: 100g
  • Bean sprouts: 300g
  • Pork: 300g
  • Chives: 70g
  • Tofu: 300g
  • Salt: 1 tablespoon
  • Pepper: 0.2 tablespoon
  • Kimchi
  • Head lettuce: 150g
  • Onion: 80g
  • Oyster mushrooms: 50g
  • Shiitake mushrooms: 20g
  • Enoki mushrooms: 50g
  • Green onion: 30g
  • Water: 500ml
  • Gochugaru (red pepper flakes): 2 tablespoons
  • Gochujang (red pepper paste): 0.5 tablespoon
  • Doenjang (soybean paste): 0.5 tablespoon
  • Guk-ganjang (soup soy sauce): 2 tablespoons
  • Beef Dashida (beef bouillon): 1 tablespoon
  • Minced garlic: 1 tablespoon
  • Crown daisy: 10g

Recipe 🍳

  1. Boil 100g of glass noodles in boiling water. 100g glass noodles.
  2. Add bean sprouts to the water used for boiling the glass noodles, blanch for exactly 2 minutes, then squeeze out the water thoroughly. 300g bean sprouts.
  3. Add the following ingredients to a food processor and mince: 300g pork, boiled glass noodles, blanched bean sprouts, 70g chives, 300g tofu with water squeezed out, 1 tablespoon salt, 0.2 tablespoon pepper.
  4. Fill the kimchi leaves with the mandu filling and roll them up.
  5. Assemble the following ingredients in a pot and boil to complete! Kimchi mandu, 150g head lettuce, 80g onion, 50g oyster mushrooms, 20g shiitake mushrooms, 50g enoki mushrooms, 30g green onion, 500ml water, 2 tablespoons gochugaru, 0.5 tablespoon gochujang, 0.5 tablespoon doenjang, 2 tablespoons guk-ganjang, 1 tablespoon beef Dashida, 1 tablespoon minced garlic, 10g crown daisy.
