Ttukdak Hyung's Jeju Gogi Guksu

A Jeju-style pork noodle soup (Gogi Guksu) featuring thick-cut pork belly and somyeon noodles, stir-fried or mixed with a spicy and sweet chili sauce.

Ingredients needed 🛒2 servings

  • Whole pork belly: 300g
  • Green onion: 1 stalk
  • Onion: 1/2
  • Apple: 1/2
  • Whole garlic: 5 cloves
  • Soup soy sauce: 2 tbsp
  • Anchovy sauce: 2 tbsp
  • Doenjang: 1/2 tbsp
  • Store-bought beef bone broth: 500ml
  • Somen noodles: 1-2 servings
  • Egg: 1 (for garnish)
  • Green onion: 1/2 stalk (for garnish)
  • Cheongyang pepper: 1
  • Soy sauce: 2 tbsp
  • Gochugaru: 1 tbsp
  • Minced garlic: 1 tbsp

Recipe 🍳

  1. In a dry frying pan, first grill 300g of whole pork belly, fat-side down, until golden brown, then grill the other sides evenly until golden brown.
  2. Once the pork is cooked, add 1 stalk of green onion, 1/2 onion, 1/2 apple, and 5 cloves of whole garlic to the frying pan where the pork was cooked.
  3. If you have a kitchen torch, lightly char the vegetables (onion, garlic, green onion). If not, grill the vegetables in the frying pan until golden brown.
  4. Add 1L of water, 2 tbsp soup soy sauce, 2 tbsp anchovy sauce, and 1/2 tbsp doenjang. Simmer over medium heat until the 1L of broth reduces to 500ml (by half).
  5. Once the liquid has reduced by half, remove the pork from the broth, set aside, and thinly slice it into bite-sized pieces.
  6. Remove all the remaining vegetables, place them in a sieve, and mash them with a spoon or ladle. Add only the mashed vegetables that pass through the sieve to the broth.
  7. Pour in 500ml of store-bought beef bone broth and bring to a boil. The broth is now complete.
