Ttukdak Hyung's Fine Dining Dakdoritang

Ingredients needed 🛒3 servings

  • Chicken thighs: 1kg
  • Cooking oil: 3 tablespoons
  • Salt: 0.5 tablespoon
  • Pepper: 0.2 tablespoon
  • Carrots: 80g
  • Water: 540ml (3 cups by paper cup)
  • Chili powder: 8 tablespoons
  • Soy sauce: 8 tablespoons
  • Sugar: 4 tablespoons
  • Chicken stock: 2 tablespoons
  • Pepper: 0.4 tablespoon
  • Onion: 150g
  • Green onion: 90g
  • Cheongyang chili 7 tablespoons
  • Minced garlic: 2 tablespoons
  • Potatoes
  • Garlic

Recipe 🍳

  1. Roast the chicken thighs in the oven. Add cooking oil to the chicken thighs. Add salt and pepper to the chicken thighs. Mix the chicken thighs well. Make cuts in the seasoned chicken thighs. Roast in a 170-degree oven for 50 minutes.
  2. Make the sauce. Add water to a pot. Add carrots to the pot. Add onion to the pot. Add green onion to the pot. Add Cheongyang chili to the pot. Add chili powder to the pot. Add soy sauce to the pot. Add sugar to the pot. Add pepper to the pot. Add chicken stock to the pot. Boil the sauce. After cooling the boiled sauce, blend it in a mixer.
  3. Make mashed potatoes. Add water and salt to a pot. Add potatoes to the pot. Remove the boiled potatoes and place them in a sieve. Mash the potatoes in the sieve.
  4. Make fried garlic. Add cooking oil to a pan. Add garlic to the pan and fry until golden brown.
  5. Complete the fine dining version of Dakdoritang. Place the sauce on a plate. Place the chicken thighs on top of the sauce. Place the fried garlic on top of the sauce. Place the mashed potatoes on top of the sauce. Place shredded perilla leaves on top of the chicken thighs.

  2. Add the sauce and main ingredients, then simmer thoroughly.
  3. Check the seasoning, then finish by adding toppings or aromatics.
