Okjubu's Gopdoritang

Ingredients needed 🛒3 servings
- chicken 1 whole
- Hanwoo offal to taste
- onion 1 large
- perilla leaves 10 leaves
- green onion 1 bunch
- green chili peppers 2
- gochujang 3 tablespoons
- red pepper powder 1 tablespoon and half
- sugar 1 tablespoon and half
- minced garlic 1 tablespoon and half
- soy sauce 3 tablespoons
- mirin 2 tablespoons
- fish sauce 1 tablespoon and half
- chicken stock 1 tablespoon and half
- black pepper to taste
- vegetable oil 1 swirl
- water 2 cups
Recipe 🍳
- Place the thoroughly washed chicken into boiling water and blanch until impurities rise to the surface, then remove and drain.
- Clean the Hanwoo offal and prepare. Slice the onion into bite-sized pieces, cut the green onion and green chili peppers diagonally, and tear the perilla leaves into thick strips.
- In a bowl, mix gochujang, red pepper powder, sugar, minced garlic, soy sauce, mirin, fish sauce, chicken stock, and black pepper to create the all-purpose seasoning sauce.
- Heat a pan with a swirl of vegetable oil, add the blanched chicken and onion, and sauté until well combined.
- Add the prepared seasoning sauce and offal, then pour in 2 cups of water. Simmer until the broth becomes thick and rich.
- Add the green onion, green chili peppers, and perilla leaves, and cook for a final minute to finish.
- Blanch the chicken and prepare vegetables and offal.
- Make the all-purpose seasoning sauce using gochujang, red pepper powder, soy sauce, garlic, and other seasonings.
- Sauté chicken and onion in a pan with oil, then add the seasoning sauce, offal, and water, and simmer until thickened.
- Add green onion, chili peppers, and perilla leaves, and cook briefly to finish.
