Ttukdak Hyung's Stir-fried Eggs

Ingredients needed 🛒4 servings

  • Based on 15 eggs
  • Eggs: 15
  • Salt: 1 tablespoon
  • Vinegar: a little
  • Green onion: 1 stalk
  • Cheongyang chili pepper: to taste
  • Sesame seeds: a little
  • Fish cake: 2 sheets
  • Water: 500ml
  • Gochujang: 3 tablespoons
  • Gochugaru: 4 tablespoons
  • Soy sauce: 4 tablespoons
  • Minced garlic: 2 tablespoons
  • Oyster sauce: 2 tablespoons
  • Oligosaccharide syrup: 1/2 cup (90ml)

Recipe 🍳

  1. Boil 15 eggs for 6 minutes in 2L of water with 1 tablespoon of salt. Use just enough water to cover the eggs in the pot.
  2. Adding a little vinegar while boiling the eggs makes them easier to peel.
  3. Peel all the boiled eggs and prepare them.
  4. Add the peeled eggs and cook with the special tteokbokki sauce. * The tteokbokki sauce recipe is detailed below under <Making Tteokbokki Sauce>.
  5. Finely chop 1 green onion and add it to cook together.
  6. For a spicier stir-fried egg dish, finely chop and add half of a Cheongyang chili pepper according to your preference.
  7. After adding green onions and Cheongyang chili peppers to the tteokbokki sauce and bringing it to a boil, stir well over low heat for 10 minutes to prevent the thick sauce from sticking.
  8. Sprinkle with sesame seeds for a delicious finish.
