  • light brown sugar (as needed)
  • vanilla extract (a little)
  • salt (a little)
  • 1 egg
  • baking powder (as needed)
  • cake flour (as needed)
  • chocolate (as needed)
  • chocolate chips (as needed)

Recipe 🍳

  1. In a bowl, add butter, dark brown sugar, light brown sugar, vanilla extract, and salt in the specified amounts and mix evenly.
  2. Crack in 1 egg and mix well, then sift in baking powder and cake flour and add to the bowl.
  3. Mix using a cutting motion with a spatula held upright to avoid overdeveloping gluten.
  4. Add chopped chocolate to the dough and mix lightly, then wrap in plastic and refrigerate for 1 hour to firm up.
  5. Divide the firm dough into about 70g portions, place on a baking sheet, and flatten into shapes.
  6. Top the dough with chocolate chips as desired, then bake in a preheated oven at 180°C (350°F) for 12 minutes.
  7. Remove the baked cookies and let them cool completely before enjoying their crispy and chewy texture.
  1. Make a basic dough by mixing butter, sugars, egg, and sifted dry ingredients.
  2. Chill the dough mixed with chocolate in the refrigerator for 1 hour to firm up.
  3. Divide into 70g portions, top with chocolate chips, and bake at 180°C (350°F) for 12 minutes, then cool.

Cooking tips 💡

  • Using a mix of dark brown sugar and light brown sugar gives a deep flavor and chewy texture simultaneously.
  • Kneading the dough by hand will make the cookies tough, so always use a spatula with a cutting motion.
  • Half of any leftover dough can be wrapped and frozen for later use—just bake straight from frozen whenever you want.
  • Right after baking, cookies are soft; let them cool completely on a wire rack to become firm and chewy.
