- 3 potatoes
- Flour (1/3 of potato weight)
- 1 egg yolk
- Salt (a pinch)
- Pizza cheese (as needed)
- Food coloring (red, yellow, green, blue, etc.) (a little)
- 1/2 onion
- 2 cloves garlic
- Basil (a little)
- Black peppercorns (a little)
- 100ml milk
- 200ml heavy cream
- 1 tbsp butter

- Bake potatoes in the oven to remove moisture, then peel while hot and press through a sieve.
- Add egg yolk and salt to the mashed potatoes, then gradually add flour, gently mixing to form a gnocchi dough without developing gluten.
- Roll the dough into long ropes, cut into bite-sized pieces, shape as desired, then boil in salted water until they float.
- Divide pizza cheese into portions and mix each with a different food coloring to prepare rainbow cheese.
- In a pan, melt butter and sauté chopped onion and garlic. Add heavy cream, milk, black peppercorns, and basil to make the cream sauce.
- When the sauce boils, add the cooked gnocchi and simmer. Finally, top with the rainbow cheese and let it melt to finish.
- Bake potatoes and press through a sieve.
- Mix with flour and egg yolk, gently knead, cut, and boil.
- Mix pizza cheese with food coloring to make rainbow cheese.
