Solo Cooking God Spicy Pork Stew

A super easy spicy pork stew using affordable pork shoulder instead of expensive ribs, simmered for 20 minutes with seasoning and water to recreate the rich flavor of spicy ribs stew.

🙋 Recommended for

  • Those who crave spicy ribs stew but find ribs too expensive or inconvenient to handle due to bones
  • People looking for a fail-safe meat stew that only requires adding seasoning and water before simmering
  • Home cooks wanting to create a hearty, cost-effective main course using pork shoulder

Ingredients needed 🛒3 servings

  • pork shoulder 600g
  • potato 1 piece
  • carrot 1/2 piece
  • green chili peppers 2~3 pieces
  • scallion 1 stalk
  • water 3 cups
  • gochujang 2 tablespoons
  • soy sauce 2 tablespoons
  • red chili powder 2 tablespoons
  • sugar 1 tablespoon
  • minced garlic 1 tablespoon
  • chicken stock 1 tablespoon
  • sesame seeds a little

Recipe 🍳

  1. Cut the pork shoulder into thick, bite-sized pieces and place them generously in a pot or deep pan.
  2. Peel the potato and carrot thoroughly, then cut them into large, mouth-sized chunks, similar to how they're prepared in ribs stew.
  3. In a bowl, combine gochujang 2 tablespoons, soy sauce 2 tablespoons, red chili powder 2 tablespoons, sugar 1 tablespoon, minced garlic 1 tablespoon, and chicken stock 1 tablespoon. Mix well to make the seasoning paste.
  4. Pour the seasoning paste and 3 cups of water into the pot with the pork. Gently stir to mix the seasonings, then simmer over high heat for about 20 minutes until the liquid reduces significantly.
  5. Once the broth has reduced to about half, add the prepared potato and carrot, and slice in green chili peppers to enhance the spiciness.
  6. Continue simmering until the potato and carrot are fully cooked and the desired broth consistency is reached. Avoid stirring too much to prevent vegetables from breaking apart.
  7. Turn off the heat when the broth becomes thick and all ingredients are fully cooked.
  8. Chop the green parts of the scallion finely and sprinkle on top. Generously garnish with sesame seeds.
  1. Cut pork into large pieces, and prepare potato and carrot into mouth-sized chunks.
  2. Place pork, seasoning paste, and water in a pot and simmer for 20 minutes to develop the broth.
  3. When the broth reduces, add potato, carrot, and green chili peppers, then simmer until vegetables are cooked through. Finish by sprinkling scallion and sesame seeds.

Cooking tips 💡

  • The 1 tablespoon of chicken stock is key to building depth of flavor, so it's best not to skip it for a richer taste.
  • After adding potato and carrot, avoid stirring frequently with a spatula—this can crush the vegetables and make the broth cloudy. Let it simmer undisturbed.
  • For a texture closer to ribs stew, cut the pork shoulder into thicker pieces suitable for stews or curries rather than thin slices used for grilled dishes.
