  • 1kg bone-in chicken pieces
  • 1/4 head aged kimchi
  • 3 cups water
  • 1/2 tbsp doenjang (soybean paste)
  • 1/2 tbsp gochujang (red pepper paste)
  • 1 tbsp soy sauce
  • 1 tbsp sugar
  • 2 tbsp gochugaru (red pepper flakes)
  • 1/3 tbsp chicken stock powder
  • Green onion, to taste
  • Sesame seeds, generously

Recipe 🍳

  1. Place 1kg of chicken pieces in a deep pan or pot, add enough water to cover, and bring to a boil.
  2. Blanch just until the pinkness disappears, then discard all the water and rinse the chicken thoroughly in cold water.
  3. Return the rinsed chicken to the pan, add 1/4 head of aged kimchi and 3 cups of water (using a paper cup measure).
  4. Add 1/2 tbsp doenjang, 1/2 tbsp gochujang, 1 tbsp soy sauce, 1 tbsp sugar, 2 tbsp gochugaru, and 1/3 tbsp chicken stock powder to make the seasoning sauce.
  5. Stir to combine, then simmer gently over medium-low heat for at least 20 minutes until the liquid has reduced and thickened.
  6. When the sauce is thickened and the chicken is tender, add sliced green onion and sprinkle with sesame seeds to finish.

  2. Place the chicken, aged kimchi, and water in a pan, then mix in the sauce base of soy sauce, doenjang, and gochujang.
