Solo Cooking God's Cabbage Okonomiyaki

- 1/4 head cabbage
- 1/2 onion
- 3–4 strips bacon
- 1 egg
- 1/2 cup Korean pancake mix
- 1/3 cup water
- Tonkatsu sauce, as needed
- Mayonnaise, as needed
- A handful of bonito flakes
Recipe 🍳
- Roughly chop or shred the cabbage and onion into bite-size pieces and place them in a large bowl.
- Cut the bacon into bite-size pieces as well, add them to the bowl, and crack in one egg.
- Add 1/2 cup of Korean pancake mix and 1/3 cup of water, and toss gently just until the ingredients are lightly bound together.
- Generously oil a frying pan, then place the batter in a thick, round layer and spread it out.
- Reduce the heat to low, cover with a lid, and cook through using the internal heat so the inside becomes moist and cooked.
- Once the bottom is golden, flip it all at once using a large plate or spatula, then cook the other side until golden.
- Transfer to a plate, drizzle tonkatsu sauce and mayonnaise in a zigzag pattern, top with bonito flakes, and serve.
- Mix shredded vegetables, bacon, egg, Korean pancake mix, and water to make a batter.
- Place a thick layer in an oiled pan, cover, and cook over low heat, flipping once to cook both sides.
- Finish with tonkatsu sauce, mayonnaise, and bonito flakes.
Cooking tips 💡
- Because this is a thick pancake, high heat will burn the outside before the inside cooks, so you must use low heat and a lid.
- If flipping is difficult, place a plate larger than the pan over the pancake, invert the pan completely, then slide the pancake back into the pan—this keeps the shape intact.
- Replacing the bacon with seafood like squid or shrimp will give it a richer ocean flavor.
