Cooking tips

  • Do not wash the kelp vigorously; just wipe it gently. Steeping it below 60°C yields a clean, savory depth.
  • Add katsuobushi to the broth at about 85°C with the heat off and steep for only 15 seconds to capture its aroma while minimizing any off-flavors.
  • Add soup soy sauce and brewed soy sauce little by little to avoid clouding the broth, and finish with salt so the seasoning is balanced when poured over rice.
