Cooking tips
- During sous vide cooking, water can evaporate due to prolonged heating, which may cause the machine to stop. Therefore, be sure to seal the top of the water bath with plastic wrap.
- Shredding the meat produces a lot of steam and is very hot. For safety, always wear rubber gloves over cotton gloves when working.
- If the meat is shredded too thinly, it can become dry as it cools. Therefore, use a more generous amount of barbecue sauce than you might expect to keep it moist and maintain its flavor.
- Spreading a coating of mayonnaise on the cut side of the bread can prevent the bread from becoming soggy due to the moist barbecue sauce.
